CB’S MOROCCAN-SPICE GRILLED CHICKEN & PEACHES

1 15-ounce jar of peaches in natural juice (about 1 cup)

3 tablespoons curry powder

Kosher or sea salt to taste

Cooking oil spray

2 large boneless chicken breasts

2 tablespoons olive oil

1 clove garlic, finely chopped

1 tablespoon brown sugar

2 tablespoons balsamic vinegar

3 tablespoons mint or parsley, chopped

Pour peaches into a strainer with a bowl set underneath; remove the peaches to a plate, and reserve the juice. Rinse the chicken, and pat it dry; season with salt and curry powder. Let chicken reach room temperature, about 15 minutes.

Preheat one side of grill to high; reduce to medium-high when grilling. Preheat the other side to medium-low. Spray cooking oil on the chicken breasts, and place them on the hot side of grill. Grill for about 4 minutes per side, lifting chicken with tongs to check for burning. When both sides have dark grill marks, remove the chicken from the hot side of the grill, and place on the other side to “roast” until done, about 8 to 10 minutes.
